Stratus pushes further into Matar’s red-wine character.

The current Matar Stratus 2024 comes from hand-harvested, low-yield vineyards and shows a richer profile with cocoa, spice, and depth.

Previous vintages have also shown lively acidity and balance alongside that concentration, which is an important part of the appeal.

Reach for it with grilled lamb, steak, braised beef, or dishes with pepper and spice.

Matar CB: The Flagship

At the top of the range is CB.

The wine is named for the cumulonimbus cloud, an appropriate image for a bottle built around depth and power. The winery describes CB as full-bodied and complex, with dark fruit, mint, chocolate, and significant aging potential.

Why Matar Tastes Like Matar

Matar was founded in 2012 by the Pelter family and is produced at Kibbutz Ein Zivan in the northern Golan Heights.

The winery sits at roughly 1,000 meters above sea level, with volcanic soils, cold winters, cool dry summers, and significant day-to-night temperature swings. Those conditions help support slower ripening and contribute to the freshness and structure that show up across the range.

Matar also developed as a distinct kosher portfolio rather than simply reproducing Pelter wines under kosher supervision, with different varieties and production methods of its own.

That combination of high-altitude growing conditions and deliberate winemaking choices helps explain why the wines can move from bright and refreshing to deep and powerful without losing their balance.

Which Matar Should You Try First?

If you want something fresh and easy to open, start with the Rosé.

For white wine, choose the Sauvignon Blanc–Semillon.

For an introduction to the reds, Cumulus is the natural starting point.

If you want something deeper and spicier, move to Stratus.
